Ingredients

  • 8 oz. cream cheese
  • 1/4 cup maple syrup or blended maple-flavored syrup
  • 1 tablespoon lemon juice
  • 1 medium banana
  • 8 3/4 oz. can crushed pineapple, drained
  • 1/2 cup chopped dates
  • 1/2 cup chopped pecans
  • 1 cup whipping cream

Instructions

  1. Cream the cream cheese; beat in syrup, lemon juice, and mashed banana.
  2. Stir in crushed pineapple, chopped dates, and chopped pecans.
  3. Fold in whipped cream gently until well combined.
  4. Line paper bake cups in a muffin tin and fill with the salad mixture.
  5. Freeze until firm.
  6. Let stand for 15 to 20 minutes at room temperature before serving.
  7. Serve on lettuce with pineapple slices and garnish with a cherry.
