Ingredients

  • 4 cups sliced carrots
  • 2 tablespoons water
  • 3/4 cup mayonnaise
  • 1/4 cup chopped onion
  • 2 tablespoons prepared horseradish
  • 1/8 teaspoon pepper
  • 1/4 teaspoon salt
  • 14 saltine crackers, crushed
  • 1 tablespoon butter
  • 2 tablespoons parsley
  • 1/2 cup shredded cheese

Instructions

  1. In a 1 1/2-quart casserole, microcook carrots and water, covered on High for 6 to 8 minutes, stirring once; drain.
  2. In a bowl, stir together mayonnaise, chopped onion, prepared horseradish, salt, and pepper.
  3. Add the mayonnaise mixture to the cooked carrots in the casserole and stir to combine.
  4. In a separate bowl, toss together crushed saltine crackers, melted butter, and chopped parsley.
  5. Sprinkle the cracker mixture over the carrot mixture in the casserole.
  6. Cook uncovered for 3 minutes in the microwave.
  7. Add shredded cheese and cook for an additional 1 to 2 minutes or until the cheese melts and the mixture is heated through.
