Ingredients

  • 1 cup grated carrots
  • 1 1/4 cups sifted flour
  • 1 teaspoon salt
  • 1 egg
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons lemon juice
  • 1 tablespoon water
  • 1/2 cup Crisco

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine all ingredients in a mixing bowl.
  3. Mix well until thoroughly combined.
  4. Pour mixture into a greased round mold and spread evenly.
  5. Bake in the preheated oven for 50 to 60 minutes.
  6. Insert a toothpick into the center; if it comes out clean, the mold is done.
  7. Remove from oven and let cool slightly before serving.
