Ingredients

  • 1 c. white sugar
  • 3/4 c. liquid shortening
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 1/2 c. carrots, grated
  • 1/2 c. nutmeats

Instructions

  1. Mix together sugar and shortening.
  2. Add eggs and mix well.
  3. Sift together flour, cinnamon, soda, and salt.
  4. Add the dry ingredients to the sugar mixture and stir until combined.
  5. Fold in grated carrots and nutmeats.
  6. Pour the batter into a loaf pan.
  7. Bake for 1 hour at 370°F.
