Ingredients

  • 2 eggs
  • 1/4 cup sugar
  • 1/4 cup firmly packed light brown sugar
  • 1/4 cup liquid Butter Buds
  • 1 1/4 cups all-purpose flour
  • 1/4 cup rolled oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup shredded carrots
  • 1/4 cup raisins

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, beat eggs with an electric mixer until very light and frothy, about 2 minutes.
  3. Add sugars and continue beating for about 3 minutes.
  4. Blend in Butter Buds.
  5. In a separate bowl, combine all-purpose flour, rolled oats, baking powder, salt, and cinnamon.
  6. Gradually add the dry mixture to the egg mixture, mixing well.
  7. Stir in shredded carrots and raisins.
  8. Spray a 9 x 5-inch loaf pan with non-stick spray or Pam.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
