Ingredients

  • 4 cups sliced carrots
  • 1 large onion, sliced and separated
  • 1 bell pepper, cut into strips
  • 1 can tomato soup
  • 1/4 cup salad oil
  • 1/2 teaspoon mustard
  • 1/2 cup vinegar
  • salt and pepper to taste

Instructions

  1. Cook sliced carrots until tender but not mushy.
  2. Drain the cooked carrots and set aside.
  3. Add sliced onions and bell pepper strips to the carrots.
  4. Combine tomato soup, salad oil, mustard, vinegar, salt, and pepper in a bowl.
  5. Bring the mixture to a boil.
  6. Pour the hot mixture over the carrot, onion, and pepper mixture.
  7. Let the salad marinate in the refrigerator for several hours before serving.
