Ingredients

  • 6 cups chicken stock
  • 1 1/2 pounds carrots, cut up
  • 1 onion, minced
  • 3/4 stick butter, unsalted
  • 1/2 cup heavy cream
  • 1 1/2 tablespoons fresh thyme, minced
  • nutmeg to taste

Instructions

  1. In a large saucepan, combine the chicken stock and the carrots.
  2. Bring the stock to a boil.
  3. Simmer the carrots, covered, for 20 minutes or until they are tender.
