  • 6 strips bacon
  • 1 1/2 lb. raw shrimp

  • 9 medium size, firm, ripe tomatoes, peeled, seeded and finely chopped
  • 2 tsp. salt
  • freshly ground black pepper
  • 2 Tbsp. finely chopped fresh parsley
  • freshly grated imported Parmesan cheese
  • 3 c. chicken stock

Instructions

  1. Shell and devein the shrimp by making a shallow incision down the back with a small, sharp knife and lifting out the black or white intestinal vein with the point of the knife.
  2. Cut the shrimp crosswise into 1/2-inch pieces and set aside.
  3. Cook the bacon in a large pot over medium heat until crispy, then remove and set aside, leaving the drippings in the pot.
  4. Add the chopped hot chilies and garlic to the bacon drippings and sauté until fragrant.
  5. Stir in the chopped tomatoes and cook until they release their juices and become slightly thickened.
  6. Add the rice and cook, stirring constantly, until it is well coated and slightly translucent.
  7. Return the bacon to the pot, then pour in the chicken stock and add salt and pepper to taste.
  8. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 20 minutes.
