Ingredients

  • 3 Tbsp. butter or margarine
  • 1/2 c. onions, chopped fine
  • 1 c. chopped green peppers
  • 1/2 c. raisins
  • 2 c. rice
  • 1/2 tsp. curry powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 qt. chicken broth

Instructions

  1. Melt butter in a large skillet or saucepan.
  2. Add chopped onions, green peppers, and raisins; sauté until tender.
  3. Stir in rice and curry powder, salt, and pepper; cook until rice is lightly browned.
  4. Pour in chicken broth and mix well.
  5. Bring to a boil, then cover with a tight-fitting lid.
  6. Reduce heat and simmer for 14 minutes.
  7. Remove from heat and toss lightly.
  8. Serve hot.
