Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 4 eggs
  • 1 1/2 cups Crisco oil
  • 1 1/2 cups raisins
  • 3 jars junior baby carrots

Instructions

  1. Mix dry ingredients: sugar, flour, soda, salt, and cinnamon.
  2. In a separate bowl, beat eggs and mix in oil and grated carrots.
  3. Add the wet mixture to the dry ingredients and mix well.
  4. Fold in the drained raisins.
  5. Pour batter into a 9 x 12-inch pan.
  6. Bake at 350°F (175°C) for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
