Carrots With Creme

Ingredients

  • 1 lb. carrots, peeled and cut into 1/4-inch rounds
  • 3 Tbsp. unsalted butter
  • 1/4 tsp. salt
  • 1/2 tsp. sugar
  • 1 1/2 c. water
  • 1/2 c. heavy cream
  • 1 Tbsp. chopped parsley

Instructions

  1. Put carrots, butter, salt, sugar, and water in a saucepan. Cook, uncovered, over medium heat until carrots are tender and water has almost evaporated, about 15 minutes.
  2. Stir in cream and parsley.
  3. Cook gently for about 2 minutes more, until cream is warm.
  4. Serve hot.
