Ingredients

  • 2 Tbsp. butter
  • 1 large onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1 clove garlic
  • 1 can (1 lb. 12 oz.) whole tomatoes
  • 1 can Ro-Tel tomatoes
  • 1 lemon, sliced
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. paprika
  • 1 bay leaf

Instructions

  1. Melt butter in a wide frying pan over medium heat.
  2. Add chopped onion, celery, green pepper, and garlic; cook until soft, about 7 minutes.
  3. Add whole tomatoes with their liquid, breaking up the tomatoes with a spoon.
  4. Add lemon slices, Worcestershire sauce, paprika, bay leaf, salt, thyme, and hot sauce.
  5. Cook, stirring occasionally, for about 15 minutes or until the sauce is slightly thickened.
  6. Press fish pieces down into the sauce.
  7. Cover the pan and simmer until the fish flakes.
  8. Serve over hot cooked rice.
