Ingredients

  • 1 (No. 5) can squash or 3 lb. fresh squash, cooked and drained
  • 1 medium onion, chopped
  • 1 Tbsp Worcestershire sauce
  • 2 cups bread crumbs
  • 6 eggs
  • 8 oz cream cheese
  • 2 cups shredded cheese
  • Black pepper and salt to taste

Instructions

  1. Drain the squash well and mash with a potato masher.
  2. Add eggs and blend in the Worcestershire sauce, chopped onion, shredded cheese, cream cheese, salt, and black pepper until well combined.
  3. Pour the mixture into a greased baking pan.
  4. Mix bread crumbs with melted oleo (butter) and sprinkle over the casserole.
  5. Bake at 350°F (175°C) for 30 minutes until golden brown and heated through.
