A hearty cauliflower and mixed vegetable casserole layered with cheese, onion, pimento, and crispy onion rings, perfect for family dinners and vegetable lovers alike.

Ingredients

  • 2 (10 oz.) packages frozen cauliflower
  • 2 (10 oz.) packages frozen mixed vegetables
  • white sauce
  • 1 cup shredded cheese
  • 2 tablespoons dehydrated onion or 1 onion
  • chopped pimento
  • 1/2 cup cracker crumbs
  • 1 can onion rings

Instructions

  1. Cook the frozen cauliflower and mixed vegetables according to package directions.
  2. Stir shredded cheddar cheese into the white sauce.
  3. Butter a 2-quart casserole dish.
  4. Layer the cooked vegetables, dehydrated onion or chopped onion, and chopped pimento in the casserole.
  5. Pour the cheese-infused white sauce over the layered vegetables.
  6. Sprinkle cracker crumbs over the sauce.
  7. Repeat the layering process with remaining vegetables, onion, pimento, sauce, and cracker crumbs.
  8. Bake at 350°F (175°C) for about 25 minutes.
  9. During the last 5 minutes of baking, add onion rings on top of the casserole.
