Cauliflower Vegetable Casserole
A hearty cauliflower and mixed vegetable casserole layered with cheese, onion, pimento, and crispy onion rings, perfect for family dinners and vegetable lovers alike.

Instructions
- Cook the frozen cauliflower and mixed vegetables according to package directions.
- Stir shredded cheddar cheese into the white sauce.
- Butter a 2-quart casserole dish.
- Layer the cooked vegetables, dehydrated onion or chopped onion, and chopped pimento in the casserole.
- Pour the cheese-infused white sauce over the layered vegetables.
- Sprinkle cracker crumbs over the sauce.
- Repeat the layering process with remaining vegetables, onion, pimento, sauce, and cracker crumbs.
- Bake at 350°F (175°C) for about 25 minutes.
- During the last 5 minutes of baking, add onion rings on top of the casserole.
