  • 4 onions, sliced
  • 2 lb. chuck, trimmed and cubed
  • 1/2 tsp. freshly ground pepper
  • 1/2 tsp. ground cumin
  • 4 garlic cloves, minced
  • 3 Tbsp. flour
  • 1 Tbsp. tomato paste
  • 3 Tbsp. vegetable oil
  • 1/2 tsp. salt
  • 6 Tbsp. red wine vinegar
  • 1/2 tsp. turmeric
  • 6 bay leaves
  • 2 c. beef broth

Instructions

  1. In a large heavy pan, cook sliced onions in vegetable oil over moderate heat, stirring until golden.
  2. In a bowl, combine 3 tablespoons of red wine vinegar, salt, pepper, and beef cubes.
  3. Add the beef mixture to the onions and cook over moderate heat until the beef is browned, about 10 to 15 minutes.
  4. Add cumin, turmeric, minced garlic, and bay leaves to the pan.
  5. Stir for 30 seconds to release the aromas.

Tips & Substitutions

For a deeper flavor, consider marinating the beef in the vinegar mixture for a few hours or overnight. If you don't have red wine vinegar, apple cider vinegar can be a suitable substitute. When adding spices, ensure they are fresh for the best aroma, especially the turmeric and cumin. Adjust the seasoning to your taste, and feel free to add some heat with chili flakes if desired.

Serving Suggestions

Serve the Ceylonese Beef over a bed of fluffy rice or with naan to soak up the flavorful sauce. Pair it with steamed vegetables or a fresh salad for a balanced meal. This dish can also be accompanied by Portuguese Cabbage Soup for a comforting dining experience. A side of pickled vegetables can add an excellent contrast to the rich flavors.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm the beef in a skillet over low heat, adding a splash of beef broth to maintain moisture. Alternatively, you can microwave it in short intervals until heated through, ensuring it does not dry out.
