Pot Au Feu

- Select a good size beef bone with plenty of meat on it.
- Extract the marrow bone, crack it, and place all in a large pot, covering with cold water. Cover tightly.
- Allow to simmer slowly all day long.
- The next day, remove the layer of grease from the top before heating.
- Add a large onion, previously roasted in the oven until a rich brown color, and stuck full of whole cloves.
- Add any other vegetables you wish to include.
- If desired, add rice or vermicelli.
- Just before serving, add a little brown sugar and stir through to give a rich color to the soup.
