Ingredients

  • beef bone
  • cold water
  • large onion
  • whole cloves
  • vegetables
  • brown sugar

Instructions

  1. Select a good size beef bone with plenty of meat on it.
  2. Extract the marrow bone, crack it, and place all in a large pot, covering with cold water. Cover tightly.
  3. Allow to simmer slowly all day long.
  4. The next day, remove the layer of grease from the top before heating.
  5. Add a large onion, previously roasted in the oven until a rich brown color, and stuck full of whole cloves.
  6. Add any other vegetables you wish to include.
  7. If desired, add rice or vermicelli.
  8. Just before serving, add a little brown sugar and stir through to give a rich color to the soup.
