Ingredients

  • 3 lb. Boston butt
  • 1 lb. pinto beans
  • 1 Tbsp. salt
  • 1 Tbsp. caraway seed
  • 2 Tbsp. chili powder
  • 1 head lettuce
  • 3 large tomatoes
  • 2 onions
  • 2 large packages shredded Cheddar cheese
  • 1 bottle taco sauce
  • 1 large bag corn chips
  • 2 pickled jalapeno peppers

Instructions

  1. Place Boston butt, pinto beans, salt, caraway seed, chili powder, and jalapeno peppers in a large pot or boiler, cover with water, and cook on low to medium heat for 3 to 4 hours or until the meat shreds easily.
  2. Break up the lettuce into smaller pieces.
  3. On a plate, scoop some of the cooked meat and bean mixture.
  4. Add a serving of lettuce, chopped tomatoes, diced onions, shredded cheese, and taco sauce on top of the mixture.
  5. Serve with a large bag of corn chips.
