Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup shredded Cheddar cheese
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup oil
  • 6 strips bacon

Instructions

  1. Grease or spray muffin pan.
  2. Stir together flour, cheese, sugar, baking powder, salt, and red pepper.
  3. Make a well in the center of the mixture.
  4. In a small bowl, combine egg, milk, and oil.
  5. Add the egg mixture to the flour mixture.
  6. Stir just until moistened; the batter should be lumpy.
  7. Fold in crumbled bacon.
  8. Fill the prepared muffin pan cups.
  9. Bake at 400°F for 20 to 25 minutes, until golden brown.
  10. Remove from pan and serve while warm.
