Tips & Substitutions

To enhance the flavor, marinate the pork chops in a mixture of olive oil, garlic, and herbs for a few hours before cooking. Consider using brown rice instead of yellow rice for a nuttier flavor and added nutrients. If you don't have raisins, dried cranberries or apricots can be a great substitute. Be sure not to overcook the pork chops to keep them tender and juicy.

Serving Suggestions

This savory pork casserole pairs wonderfully with a fresh side salad or steamed green beans for a balanced meal. You can also serve it with crusty bread to soak up the flavorful juices. For a comforting touch, consider serving it alongside Mom's Lettuce and Bacon Dressing for a delightful flavor combination.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the casserole in a preheated oven at 350°F for about 20 minutes or until heated through. You can also microwave individual portions on medium power until warm, but be careful not to dry out the pork.

Frequently Asked Questions

Can I use boneless pork chops instead of bone-in?

Yes, boneless pork chops can be used in this recipe. They will cook faster, so reduce the cooking time by about 5-10 minutes. Just ensure they reach an internal temperature of 145°F for safe consumption.

What can I substitute for yellow rice?

If you don’t have yellow rice, you can use white rice and add a pinch of turmeric or saffron for color and flavor. Alternatively, quinoa or couscous can work well for a different texture and taste.

How do I make this dish ahead of time?

You can prepare the casserole up to the baking step and refrigerate it for up to 24 hours. When you're ready to bake, simply add an extra 10-15 minutes to the cooking time to ensure it's heated through properly.
