Ingredients

  • 1 1/2 cups Zwieback crumbs
  • 3 tablespoons sugar
  • 2 teaspoons grated lemon rind
  • 6 tablespoons butter or margarine, melted
  • 4 (8 oz.) packages cream cheese
  • 1 cup finely grated mild Cheddar cheese
  • 1 3/4 cups sugar
  • 5 eggs
  • 1/2 cup cream

Instructions

  1. Mix Zwieback crumbs with 3 tablespoons sugar and 2 teaspoons grated lemon rind in a small bowl.
  2. Blend in melted butter until well combined.
  3. Press the mixture evenly over the bottom and sides of an 8-inch spring-form pan.
  4. Set the pan in a 12-inch long piece of foil; fold the foil up along the sides to catch any butter that may bubble out.
  5. Chill the crust while making the filling.
  6. In a large bowl, beat all remaining ingredients: cream cheese, grated Cheddar cheese, sugar, eggs, and cream until smooth.
  7. Pour the filling into the prepared crust.
  8. Bake at 500°F (260°C) for 12 minutes.
  9. Reduce temperature to 250°F (120°C) and bake for an additional 2 hours or until the top is firm.
  10. Allow the cheesecake to cool completely.
  11. Garnish with canned or fresh fruit, such as cherries.
