Ingredients

  • 1 cup instant rice
  • 2 tablespoons minced onion
  • 1 cup frozen peas
  • 2 cups diced cooked turkey
  • 1 can Cheddar cheese soup
  • 1 can milk
  • 1 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/2 cup finely crushed round crackers
  • 2 tablespoons melted butter

Instructions

  1. Prepare rice according to package instructions.
  2. Add cooked rice, minced onion, and boiling water; mix well.
  3. In a separate bowl, combine peas, diced cooked turkey, Cheddar cheese soup, milk, mustard, and salt. Mix all ingredients together.
  4. Pour the mixture into a 10 x 6 x 1 1/2-inch baking dish.
  5. Mix crushed crackers and melted butter, then sprinkle on top of the casserole.
  6. Bake at 350°F (175°C) for 35 minutes.
