- Prepare rice according to package instructions.
- Add cooked rice, minced onion, and boiling water; mix well.
- In a separate bowl, combine peas, diced cooked turkey, Cheddar cheese soup, milk, mustard, and salt. Mix all ingredients together.
- Pour the mixture into a 10 x 6 x 1 1/2-inch baking dish.
- Mix crushed crackers and melted butter, then sprinkle on top of the casserole.
- Bake at 350°F (175°C) for 35 minutes.
