Ingredients

  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chopped nut meats
  • 6 ounces maraschino cherries, quartered
  • Cherry juice from cherries

Instructions

  1. Beat sugar and eggs together until well combined.
  2. Sift flour, measure, then sift with baking powder and salt.
  3. Add chopped nuts and quartered maraschino cherries to the mixture.
  4. Alternately add flour mixture and cherry juice, mixing gently after each addition.
  5. Pour batter into a greased 1-pound loaf pan.
  6. Bake for 1 hour at 350°F (175°C) until a toothpick inserted in the center comes out clean.
