Ingredients

  • 1 large Spanish onion
  • 2 Tbsp margarine
  • 1 1/2 c corn bread mix
  • 1 (8 oz) can cream-style corn
  • 1/3 c milk
  • 1 egg
  • 4 drops Tabasco
  • 1 c shredded Cheddar cheese
  • 1 c sour cream

Instructions

  1. Slice the onion into thin rings.
  2. Melt margarine in a small skillet and add the sliced onion.
  3. Saute over medium heat for about 10 minutes until the onion becomes transparent.
  4. Set aside to cool.
  5. Preheat the oven to 425°F (220°C).
  6. In a large bowl, combine the corn bread mix, cream-style corn, milk, beaten egg, and Tabasco sauce.
  7. Stir in 1/2 cup of shredded Cheddar cheese into the batter.
  8. Pour the batter into a greased 8-inch square baking pan.
  9. In a separate small bowl, mix sour cream, a pinch of salt, the cooled sautéed onion, and 1/4 cup of shredded cheese.
  10. Spread this sour cream mixture evenly over the batter in the pan.
  11. Sprinkle the remaining cheese on top.
  12. Bake for 30 minutes or until golden brown on top.
  13. Let stand for 10 minutes before cutting into squares.
