Ingredients

  • 1 1/2 cups milk
  • 1 cup soft bread crumbs
  • 1 can pimento, chopped
  • 1 tablespoon minced parsley
  • 1 1/2 tablespoons minced onion
  • 3/8 teaspoon salt
  • 1/8 teaspoon pepper
  • dash of paprika
  • dash of garlic salt
  • 3 eggs, well beaten
  • 1 1/2 cups grated Cheddar or processed American cheese
  • 1 cup drained, cooked vegetables (such as carrots, peas, cauliflower, string beans)

Instructions

  1. Heat the milk and pour it over the bread crumbs.
  2. Add the chopped pimento, minced parsley, minced onion, grated cheese, salt, pepper, paprika, and garlic salt to the mixture, then stir in the well-beaten eggs.
  3. Place the drained, cooked vegetables in a greased or oiled 1 1/2-quart casserole dish.
  4. Pour the milk and cheese mixture over the vegetables.
  5. Set the casserole in a pan of warm water.
  6. Bake in a moderate oven at 350°F (175°C) for 1 hour, or until the casserole is firm.
