- In a food processor or blender, process the oatmeal cookies and melted butter until the mixture is crumbly.
- Press the cookie mixture onto the bottom and sides of the tart pan; refrigerate.

- In a food processor, blend the ricotta or cottage cheese, egg whites, vanilla extract, almond extract, and honey until smooth.
- Pour the filling into the prepared tart shell.
- Bake until the filling is firm, about 30 minutes.
- Chill the tart before serving.
- Garnish with fresh fruit such as tangerine, kiwi, or berries.
