Ingredients

  • 4 oz oatmeal cookies
  • 2 Tbsp melted butter or margarine
  • 2 c part-skim ricotta or low-fat cottage cheese
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 3 Tbsp light honey
  • fresh fruit such as tangerine, kiwi, berries

Instructions

  1. Lightly oil a 9-inch tart pan.
  2. In a food processor or blender, process the oatmeal cookies and melted butter until the mixture is crumbly.
  3. Press the cookie mixture onto the bottom and sides of the tart pan; refrigerate.
  4. Preheat the oven to 325°F (163°C).
  5. In a food processor, blend the ricotta or cottage cheese, egg whites, vanilla extract, almond extract, and honey until smooth.
  6. Pour the filling into the prepared tart shell.
  7. Bake until the filling is firm, about 30 minutes.
  8. Chill the tart before serving.
  9. Garnish with fresh fruit such as tangerine, kiwi, or berries.
