Ingredients

  • 1 cup shredded sharp Cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 teaspoon butter
  • 1 egg
  • 1/2 cup milk
  • 1 1/2 cups cornbread mix
  • 1 tablespoon poppy seed

Instructions

  1. Cook chopped onion in 1 teaspoon of butter until tender.
  2. Combine beaten egg and milk in a buttered 1 1/2-quart casserole dish.
  3. Stir in cornbread mix.
  4. Add cooked onion and half of the shredded cheese to the mixture.
  5. Sprinkle remaining cheese and poppy seed over the top.
  6. Drizzle 2 tablespoons of melted butter over the top.
  7. Bake in a 400°F oven for 20 to 25 minutes.
  8. Serve hot.
