Ingredients

  • 15 medium potatoes
  • 1/2 cup butter
  • 1 1/2 cups onions, chopped
  • 1/2 cup flour
  • 2 1/2 teaspoons salt
  • 2 teaspoons dry mustard
  • 2 teaspoons Worcestershire sauce
  • 6 cups milk
  • 1 pound cheddar cheese
  • 1 cup saltine crackers, crumbs
  • 1/4 cup butter, melted

Instructions

  1. Cook potatoes in boiling water until tender. Drain well.
  2. Melt 1/2 cup butter in a large saucepan.
  3. Add chopped onions and sauté until tender.
  4. Blend in flour, salt, dry mustard, and Worcestershire sauce.
  5. Gradually stir in milk and cook, stirring constantly, until sauce thickens and boils for 1 minute.
  6. Remove from heat and add shredded cheddar cheese, stirring until melted.
  7. Place cooked potatoes in a baking dish.
  8. Pour the cheese sauce over the potatoes.
  9. Sprinkle with saltine cracker crumbs mixed with 1/4 cup melted butter.
  10. Top with paprika.
  11. Bake at 350°F for 30 minutes until golden and bubbly.
