Ingredients

  • 2 lb. summer squash
  • 1 medium onion, chopped
  • 1 cup Cheddar cheese, grated
  • 1 tablespoon sugar
  • 2 eggs, beaten
  • 3 tablespoons butter, melted
  • 1 teaspoon ground sage
  • paprika
  • salt

Instructions

  1. Cook squash in a small amount of boiling salted water until tender.
  2. Combine all ingredients except 1/2 of the cheese and paprika.
  3. Pour into a buttered casserole and place remaining cheese on top.
  4. Sprinkle with paprika.
  5. Bake at 350° for 25 minutes.
