Ingredients

  • 1/2 lb. ground beef
  • 1 small onion
  • 1 qt. canned tomatoes
  • 2 (6 oz.) tomato paste
  • 2 c. water
  • 2 Tbsp. parsley
  • 1/2 tsp. oregano
  • 1 tsp. sugar
  • 1 tsp. garlic powder
  • 1 (12 oz.) box manicotti shells
  • 24 oz. cottage cheese
  • 1 egg
  • 8 oz. mozzarella cheese
  • 8 oz. Mozzarella cheese

Instructions

  1. Brown the ground beef and chopped onion in a skillet.
  2. Add canned tomatoes, tomato paste, water, parsley, oregano, sugar, and garlic powder to the beef mixture.
  3. Simmer the sauce for 30 minutes.
  4. Cook the manicotti shells according to package instructions and drain.
  5. Mix cottage cheese with the egg and 2 teaspoons parsley.
  6. Stuff the cooked shells with the cheese mixture and place in a baking dish.
  7. Cover the stuffed shells with the prepared tomato sauce.
  8. Sprinkle with mozzarella cheese.
  9. Bake in a preheated oven at 375°F (190°C) until cheese is melted and bubbly, about 20-25 minutes.
