- Brown the ground beef or turkey in a 2-quart casserole dish.
- Drain off the fat.
- Stir in the spaghetti sauce.
- Cover with Saran Wrap and microwave on High for 4 to 6 minutes.
- Combine Ricotta cheese, Parmesan cheese, eggs, and 1 1/2 cups of shredded Mozzarella cheese.
- Stuff the manicotti shells with the cheese mixture.
- In a 13 x 2-inch baking dish sprayed with Pam, arrange the manicotti in a single layer.
- Add the meat sauce to completely cover the manicotti.
- Sprinkle the remaining Mozzarella cheese on top.
- Cover the dish with Saran Wrap and cook on Medium-high for 30 to 35 minutes, rotating the dish 1/2 turn during cooking.
- Let stand for 5 minutes before serving.
