Ingredients

  • 1 lb. ground beef or ground turkey
  • 1 (32 oz.) jar spaghetti sauce
  • 1 cup water
  • 1 (15 oz.) container Ricotta cheese
  • 2 Tbsp. grated Parmesan cheese
  • 2 eggs
  • 1 (8 oz.) package shredded Mozzarella cheese
  • 1 (8 oz.) package manicotti

Instructions

  1. Brown the ground beef or turkey in a 2-quart casserole dish.
  2. Drain off the fat.
  3. Stir in the spaghetti sauce.
  4. Cover with Saran Wrap and microwave on High for 4 to 6 minutes.
  5. Combine Ricotta cheese, Parmesan cheese, eggs, and 1 1/2 cups of shredded Mozzarella cheese.
  6. Stuff the manicotti shells with the cheese mixture.
  7. In a 13 x 2-inch baking dish sprayed with Pam, arrange the manicotti in a single layer.
  8. Add the meat sauce to completely cover the manicotti.
  9. Sprinkle the remaining Mozzarella cheese on top.
  10. Cover the dish with Saran Wrap and cook on Medium-high for 30 to 35 minutes, rotating the dish 1/2 turn during cooking.
  11. Let stand for 5 minutes before serving.
