Ingredients

  • 2 eggs, beaten
  • 2 (15 oz.) Ricotta cheese
  • 2 cups shredded Mozzarella cheese
  • 1 cup grated Parmesan cheese, divided
  • 1/2 cup chopped parsley
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 12 jumbo shells, cooked and drained
  • 3 cups prepared spaghetti sauce

Instructions

  1. In a medium bowl, combine eggs, ricotta cheese, mozzarella cheese, 3/4 cup Parmesan cheese, parsley, salt, and pepper.
  2. Spoon about 2 tablespoons of the mixture into each cooked and drained jumbo shell.
  3. Arrange the stuffed shells in a 13 x 9-inch baking dish.
  4. Top the shells with prepared spaghetti sauce.
  5. Sprinkle remaining Parmesan cheese over the sauce.
  6. Bake at 350°F (175°C) for 30 minutes.
