Ingredients

  • 1/2 lb. ground beef
  • 1 cup yellow corn meal
  • 3/4 Tbsp. salt
  • 1/2 Tbsp. baking soda
  • 1 (17 oz.) can creamed corn
  • 2 eggs
  • 1/4 cup oil
  • 1 onion
  • 2 cups shredded cheese

Instructions

  1. Mix corn meal, salt, baking soda, creamed corn, eggs, oil, and chopped onion (if using) well in a bowl.
  2. Pour half of the batter into a greased pan, such as an iron skillet.
  3. Sprinkle seasoned ground beef over the batter in the pan.
  4. Add shredded cheese on top of the beef.
  5. Pour the remaining batter over the cheese layer.
  6. Bake at 375°F (190°C) for 35 minutes until golden brown and cooked through.
