Ingredients

  • 1 c. cubed cooked chicken
  • 2 c. broccoli flowerets
  • 1 c. carrot slices
  • 1/4 c. margarine
  • 2 c. summer squash slices
  • 1/2 lb. asparagus spears, cut in 1-inch pieces
  • 3/4 lb. Velveeta cheese spread, cubed
  • 3/4 c. half and half
  • 1 tsp. oregano

Instructions

  1. In a large skillet, stir-fry broccoli and carrots in margarine for 3 minutes.
  2. Add summer squash slices and asparagus; stir-fry until crisp-tender.
  3. Reduce heat to medium.
  4. Add Velveeta cheese spread, half and half, and oregano.
  5. Stir until cheese is melted and sauce is smooth.
  6. Add cooked chicken cubes and stir lightly to combine.
  7. Serve hot.
