Ingredients

  • 4 chicken breasts or 4 legs and thighs or 1 whole chicken
  • 16 oz. spaghetti
  • 1 large bell pepper
  • 1 large onion
  • 1 stick oleo
  • 1 can Ro-Tel tomatoes
  • 1 can nacho cheese soup
  • 1 can cream of mushroom soup
  • 1 lb. Velveeta

Instructions

  1. Boil chicken until cooked, then remove and dice.
  2. Cook spaghetti in the chicken broth until al dente.
  3. Saute chopped bell pepper and onion in one stick of oleo until tender.
  4. Add the sautéed vegetables to the cooked spaghetti.
  5. Stir in Ro-Tel tomatoes, nacho cheese soup, cream of mushroom soup, Velveeta cheese, and diced chicken.
  6. Mix until the cheese melts and everything is well combined.
  7. Pour the mixture into a casserole dish and bake at 450°F for 15 to 20 minutes.
