Ingredients

  • 2 1/2 to 3 lb. chicken, cut up
  • garlic salt
  • paprika
  • 1/2 c. Parmesan cheese, grated
  • 2 c. seasoned bread crumbs
  • 3 eggs
  • 3 Tbsp. milk
  • 1/2 c. butter, melted
  • waxed paper

Instructions

  1. Season chicken with paprika and garlic salt.
  2. Beat eggs and milk in a shallow bowl.
  3. Combine bread crumbs and grated Parmesan cheese in a separate shallow bowl and blend.
  4. Coat chicken pieces first in the egg mixture, then in the bread crumb mixture.
  5. Arrange chicken in a microwave-safe dish with meaty portions facing outward.
  6. Drizzle melted butter over the chicken and sprinkle with any remaining bread crumbs.
  7. Cover the dish with waxed paper and microwave on high for 5 to 8 minutes.
  8. Continue cooking on 70% power for 15 to 18 minutes or until chicken is done.
  9. Let stand for 5 minutes before serving.
