Ingredients

  • 2 c. all-purpose flour
  • 1 c. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. butter or oleo
  • 1 c. whole almonds
  • 2 large eggs
  • 1/2 tsp. vanilla
  • 1 Tbsp. milk

Instructions

  1. Preheat oven to 350°F and grease a large baking sheet.
  2. Mix flour, sugar, baking powder, and salt in a bowl.
  3. Cut in butter until coarse crumbs form.
  4. Stir in chopped almonds and cherries.
  5. Add eggs and vanilla; mix well.
  6. If mixture is crumbly or dry, add milk a tablespoon at a time until dough comes together.
  7. Shape dough into a log on the prepared baking sheet.
  8. Bake for 25 minutes or until golden.
  9. Remove from oven, let cool slightly, then slice into biscotti.
  10. Return slices to baking sheet and bake for an additional 10 minutes to crisp.
