Delicious stuffed pasta shells filled with a creamy spinach and cottage cheese mixture, topped with marinara sauce and Parmesan, perfect for a comforting family meal.

Ingredients

  • 24 jumbo pasta shells
  • 1 1/2 tsp olive oil
  • 2 onions, finely chopped
  • 1 lb fresh chopped spinach
  • 16 oz cottage cheese
  • 2/3 cup fine dry bread crumbs
  • 1/4 tsp grated nutmeg
  • 3/4 cup Parmesan cheese
  • 1 egg white
  • 3 cups marinara sauce

Instructions

  1. Preheat oven to 475°F.
  2. Cook pasta shells, rinse with cold water, and set aside.
  3. Combine onion, olive oil, and spinach in a skillet and heat for 3 minutes.
  4. Puree cottage cheese in a food processor or blender.
  5. In a bowl, combine cottage cheese, bread crumbs, grated nutmeg, and 1/2 cup of Parmesan cheese.
  6. Mix the cottage cheese mixture and fold in the cooked spinach mixture, then stir in the egg white.
  7. Spread 1 cup of marinara sauce in a 9 x 13-inch baking dish.
  8. Stuff each pasta shell with approximately 2 tablespoons of the cheese and spinach mixture.
  9. Arrange the stuffed shells on top of the marinara sauce in the dish.
  10. Pour the remaining 2 cups of marinara sauce over the shells and sprinkle with Parmesan cheese.
  11. Cover the dish and bake at 375°F for 30 minutes.
  12. Remove from oven and let cool for 10 minutes before serving.
