- Preheat the oven to 350°F (175°C).
- In a mixing bowl, sift together 1 3/4 cups of flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
- Cut in 1/3 cup of shortening until the mixture resembles coarse crumbs.
- Stir in 1 cup of sugar, then add the well-beaten egg and 2/3 cup of lemon extract, mixing well.
- Fold in 2 cups of drained cherries.
- Pour the batter into a greased baking dish.
- Bring 2 cups of water to a boil and carefully pour over the batter in the dish.
- Bake for 35 to 40 minutes until golden and a toothpick inserted in the center comes out clean.
- Serve warm with ice cream or whipped cream. Refrigerate leftovers.
