Ingredients

  • 1 3/4 cups sifted flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 1 cup sugar
  • 1 egg, well beaten
  • 2/3 cup lemon extract
  • 1/2 cup sugar
  • 2 cups drained cherries
  • 2 cups boiling water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, sift together 1 3/4 cups of flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  3. Cut in 1/3 cup of shortening until the mixture resembles coarse crumbs.
  4. Stir in 1 cup of sugar, then add the well-beaten egg and 2/3 cup of lemon extract, mixing well.
  5. Fold in 2 cups of drained cherries.
  6. Pour the batter into a greased baking dish.
  7. Bring 2 cups of water to a boil and carefully pour over the batter in the dish.
  8. Bake for 35 to 40 minutes until golden and a toothpick inserted in the center comes out clean.
  9. Serve warm with ice cream or whipped cream. Refrigerate leftovers.
