Ingredients

  • 2 1/2 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1 1/4 cups dairy eggnog
  • 6 tablespoons butter or margarine, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans
  • 1/2 cup chopped candied cherries

Instructions

  1. Preheat oven to 350°F.
  2. Grease three 5 1/2 x 3-inch mini loaf pans.
  3. Combine flour, sugar, baking powder, and ground nutmeg in a large bowl.
  4. In a medium bowl, stir together eggnog, melted butter, eggs, and vanilla until well blended.
  5. Add the eggnog mixture to the flour mixture and stir until all ingredients are moistened.
  6. Fold in chopped pecans and candied cherries.
  7. Spoon the batter into the prepared loaf pans.
  8. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in pans for 15 minutes, then remove and cool on wire racks.
