Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 packages (7 1/4 oz. each) pitted dates
  • 1 pound dried, candied pineapple
  • 2 jars (16 oz. each) cherries, drained
  • 18 oz. pecan halves
  • 6 eggs
  • 1/3 cup dark rum
  • 1/2 cup light corn syrup

Instructions

  1. Grease a tube pan or two 9 x 5 x 3-inch loaf pans.
  2. In a bowl, combine the all-purpose flour, baking powder, and salt, and mix well.
  3. Add the dried fruits, candied pineapple, and drained cherries to the flour mixture and toss to coat.
  4. In a separate bowl, beat the eggs and dark rum together, then pour over the fruit mixture.
  5. Mix thoroughly until well combined.
  6. Pour the batter into the prepared pan(s).
  7. Bake at 300°F (150°C) for 1 hour and 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and brush with the light corn syrup glaze before serving.
