Ingredients

  • 3/4 cup milk
  • 3/4 cup plus 1/16 cup farina breakfast cereal
  • 3/4 cup sugar
  • 1/2 cup butter
  • 1/2 cup ground almonds or hazelnuts
  • 6 eggs, separated
  • cinnamon to taste
  • 1/2 lemon rind, grated
  • 2 pounds cherries (canned or pitted)

Instructions

  1. Combine milk, sugar, and farina, stirring frequently.
  2. Heat until thickened just to boiling point; don't boil.
  3. Let mixture cool.
  4. Beat egg whites until stiff.
  5. Beat egg yolks into cooled milk-farina-sugar mixture.
  6. Add cherries, ground almonds or hazelnuts, butter, cinnamon, and grated lemon rind to the mixture.
  7. Gently fold in the beaten egg whites.
  8. Pour the batter into a buttered 9 x 13-inch pan.
  9. Bake at 375°F (190°C) for 1 hour.
  10. Serve with cream or whipped cream.
