- Preheat the oven if you wish to warm the canapes, or serve immediately.
- Spread the cream cheese with chives evenly over each melba toast round.
- Drain the sliced mushrooms and chop them if desired.
- In a skillet, melt the butter over medium heat.
- Add the sliced mushrooms to the skillet and sauté until tender, about 5 minutes.
- Remove the skillet from heat and let cool slightly.
- Mix the egg yolk into the sautéed mushrooms.
- Top each prepared melba toast with the mushroom mixture.
- Optionally, bake in a preheated oven at 350°F (175°C) for 5-7 minutes to warm through.
- Serve immediately or at room temperature.
