Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup salad oil
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • raisins
  • brown sugar
  • cinnamon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine egg, milk, and salad oil.
  3. Add flour, sugar, baking powder, and salt; mix until just combined.
  4. Pour batter into a greased baking dish.
  5. Spoon cherry jam in small amounts over the batter.
  6. Sprinkle raisins, brown sugar, and cinnamon on top.
  7. Bake for 20 to 25 minutes, or until golden and a toothpick inserted in the center comes out clean.
  8. While still hot, drizzle with icing made from confectioners sugar moistened with milk.
