Ingredients

  • 2 chicken breasts, boned
  • 2 slices bacon
  • 1 teaspoon chopped garlic
  • 2 tablespoons olive oil
  • 1/2 pint light cream
  • 2 tablespoons cornstarch
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon oregano
  • 1/3 cup frozen peas
  • 1 chopped scallion
  • fresh ground pepper to taste
  • 1/4 cup white wine

Instructions

  1. Cut bacon into small pieces and chicken into about 1-inch cubes.
  2. Add garlic and olive oil into a hot skillet; cook until chicken is done.
  3. Remove chicken and bacon from the skillet.
  4. Reheat the skillet and add white wine to deglaze, picking up flavors from the pan.
  5. Slowly add light cream, chopped scallions, cayenne pepper, oregano, and frozen peas to the skillet.
  6. Mix cornstarch with about 4 ounces of water to make a slurry.
  7. Gradually add the cornstarch mixture to the sauce, stirring until it becomes creamy.
  8. Add the cooked chicken and bacon back into the skillet; heat through.
  9. Season with fresh ground black pepper to taste.
  10. Serve the sauce over cooked pasta.
