  • 1/4 cup grated Parmesan
  • 1 Tbsp parsley

Instructions

  1. Prepare the fettuccine in a saucepot as label directs; drain and keep warm.
  2. Cut each chicken breast in half.
  3. In a small bowl, beat the egg slightly.
  4. On wax paper, mix 1/4 cup flour, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
  5. Dip chicken pieces into the beaten egg, then into the flour mixture to coat evenly.
  6. In a skillet, melt butter or oleo over medium heat and cook coated chicken until browned and cooked through.
  7. Add sliced mushrooms to the skillet and cook until tender.
  8. In a separate saucepan, heat 1 1/2 cups milk with 2 Tbsp dry sherry until warm.
  9. Stir the milk mixture into the skillet with chicken and mushrooms, cook until slightly thickened.
  10. Remove from heat and stir in 1/4 cup grated Parmesan and 1 Tbsp chopped parsley.
