Ingredients

  • 1 lb boneless chicken breasts, cut into 1-inch pieces
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 3 Tbsp lemon juice
  • 1 Tbsp cornstarch
  • 1/2 tsp rosemary
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • salt
  • pepper
  • 6.5 oz jar artichoke hearts

Instructions

  1. Drain and cut up artichoke hearts; set aside.
  2. Saute chicken pieces and minced garlic in olive oil over medium-high heat for about 5 minutes until browned.
  3. In a separate bowl, mix chicken broth, lemon juice, cornstarch, rosemary, basil, oregano, salt, and pepper.
  4. Add the mixture to the cooked chicken and stir to combine.
  5. Let the sauce thicken over a few minutes.
  6. Add the artichoke hearts and simmer for 10 to 15 minutes.
  7. Serve over angel hair pasta or rice.
