A smooth, flavorful zucchini purée with savory onion and herbs, perfect as a starter or side dish for a light, healthy meal suitable for all tastes.

Ingredients

  • 1 large onion, quartered and sliced
  • 2 Tbsp oleo
  • 2 c chicken broth
  • 2 c boiling water
  • 2 bouillon cubes
  • 4 c zucchini, diced
  • 1/8 tsp garlic powder
  • 1/8 tsp celery salt
  • 1/4 c parsley leaves
  • 1 tsp Worcestershire sauce

Instructions

  1. Saute the onion in oleo until tender.
  2. Add all ingredients except parsley to the pot.
  3. Cook for 5 minutes or until the zucchini is tender.
  4. Pour the mixture into a blender, add parsley, and pureé until smooth.
  5. Cover and be careful of leakage as it's hot.
  6. Serve hot or cold.
