Ingredients

  • 4 chicken breast halves, boned and skinned
  • 2 Tbsp. cornstarch
  • 1 tsp. ground cumin
  • 1 tsp. garlic salt
  • 1 egg
  • 1 Tbsp. water
  • 1/2 c. cornmeal
  • cherry tomatoes
  • 3 Tbsp. cooking oil
  • 1 avocado
  • 1 1/2 c. shredded Monterey Jack cheese
  • 1/2 c. sour cream
  • 1/4 c. sliced green onion
  • 1/4 c. chopped sweet red pepper
  • parsley sprigs

Instructions

  1. Flatten the chicken breasts.
  2. In a shallow dish, mix together cornstarch, ground cumin, and garlic salt; dredge each chicken piece to coat.
  3. Mix the egg and water.
  4. Place cornmeal in another bowl.
  5. Dip each chicken piece first into the egg mixture, then into the cornmeal, turning to coat.
  6. In a frypan, heat the cooking oil over medium heat.
  7. Cook the chicken for 2 minutes on each side until golden brown.
  8. Remove the chicken to a baking pan, place avocado slices over each piece, and sprinkle with shredded Monterey Jack cheese.
  9. Bake in a 350°F oven for about 15 minutes or until the chicken is cooked through and the cheese melts.
  10. Top each chicken with sour cream, dividing evenly.
  11. Sprinkle with sliced green onion and chopped red pepper.
  12. Garnish with parsley and cherry tomatoes.
