Ingredients

  • 1 small chicken
  • 1/2 cup olive oil
  • 1 medium onion
  • 2 cups chicken broth
  • 1 can cream of potato soup
  • 3 tablespoons flour
  • 1 can pork and beans
  • 1/3 cup grated cheese
  • 1/4 cup sliced red pimento

Instructions

  1. Cut the chicken and brown it slightly in olive oil.
  2. In another pan, sauté the sliced onion in butter.
  3. Add chicken broth and the browned chicken to the onion, and cook for 10 minutes.
  4. Then add the can of cream of potato soup to the mixture.
  5. Simmer until the chicken is tender.
  6. Remove the chicken and place it in a Pyrex dish.
  7. Add drained pork and beans, grated cheese, and sliced red pimentos to the stew before serving.
