  • 1/2 c. evaporated skim milk

Instructions

  1. Sprinkle chicken with pepper; set aside.
  2. Coat Dutch oven with vegetable cooking spray.
  3. Place over medium-high heat until hot; add chicken and cook 2 minutes on each side until browned.
  4. Add sliced carrots, chopped onion, sliced mushrooms, water, white wine, chicken bouillon granules, dried tarragon, dried thyme, and bay leaf.
  5. Bring to a boil.
  6. Cover and reduce heat; simmer for 15 minutes or until chicken and vegetables are tender.
  7. Remove chicken to a serving platter.
  8. Combine cornstarch and evaporated skim milk; add to vegetable mixture, stirring constantly.
  9. Bring to a boil and simmer until thickened.
  10. Remove from heat; stir in lemon juice.
  11. Spoon vegetable mixture over chicken and serve.
